Italian Pizzelles

One of my favorite family recipes that I used to love making with my grandmother! Below is just her ingredients, I did have to find standard directions for the below. You can remove the anise and do vanilla and did into some melted chocolate and add sprinkles if feeling festive!

Ingredients:

  • 6 Eggs

  • 1 1/2 cups of sugar

  • 1 1/2 cups of softened butter

  • 4 teaspoons of anise extract

    • Personally, I do about half of the anise when I make the recipe as I don't like as strong of a flavor

  • 2 teaspoons of vanilla

  • 3 cups of flour

  • 2 teaspoons of baking powder

  • Optional, powdered sugar

Directions:

  1. Preheat pizzelle iron and lightly coat with nonstick cooking spray.

  2. Whisk together your eggs, sugar, vanilla and anise (see how to measure anise above) in a medium bowl.

  3. Now add your flour and baking powder and mix it well until there are no lumps and it looks smooth.

  4. Drop slightly rounded tablespoons of batter onto a pizzelle iron and close.

  5. Bake as directed by the manufacturer or until golden brown, 30 seconds to 1 minute. Using a nonstick spatula, remove each pizzelle to a cooling rack (or parchment paper); repeat with the remaining batter.

  6. Cool completely and dust with powdered sugar if desired.
